not sure but I am still at the GFS 12Z wind forecast while we are past 6:30 pm (UTC + 1 here in Switzerland). I had the GFS 6Z forecast until 5 PM, then it switched to GFS 12Z right at 5 pm. It look like that the forecast is delayed by 6 hours, as a result wind forecast is different than on the VR chart.
am i doing something wrong?

The 12Z forecast is started at 12Z and becomes available at 16Z, so that's expected.

About the differences - it's unclear when and how exactly VR switches from one model to the next, so some differences around the update time are not unexpected. If sailing at optimum downwind/upwind TWA you should stick with the game interface.

The bad news is that I just checked my in-game from the point of view of another boat and there is half knot difference in wind speed. Which meeans that the game engine uses different weather data than the user interface.

You can actually do the same test by clicking another boat and comparing the wind speed at the cursor and in the info panel. The actual difference will depend on the difference between the forecasts/GFS model used/interpolation details.
